Chicken and Sausage Gumbo

I love when bloggers and friends share recipes. I always love trying out new foods for my family because, well lets face it, we get tired of the same thing. But when I do find a recipe that is super yummy we def. have it about once a week. This gumbo recipe is one of those meals that I could make every single week. I love it! Hope you do too! Enjoy!

Chicken and Sausage Gumbo

Ingredients: 
1/2 cup vegetable oil
1/2 cup flour
1 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped green bell pepper
1 Tablespoon Italian seasoning
1 Tablespoon chopped fresh parsley
1/2 lb andouille sausage cut crosswise into 1/4" slices
1 lb boneless skinless chicken breast chopped
1/2 lb smoked sausage, cut same as andouille
2 cups water plus more as needed 
2 Tablespoon Creole Seasoning
1 Tablespoon sugar
1/4 cup picante sauce
1 bay leaf
2 cups chicken broth

Heat oil in large pot over medium heat. Add flour and stir slowly and constantly making a roux the color of chocolate. 

Reduce heat to low and add the onions, celery, bell peppers, Italian seasoning, parsley, andouille, chicken, and smoked sausage. Add 2 cups of water. Cover and cook stirring often for 30 minutes. 

Add remaining ingredients and stirring every 15 minutes for 1 hour. Add water as needed to keep from becoming too thick. Skim grease, remove bay leaf and serve over rice.
